  • 400 g beef stew meat cut into chunks
  • 2 carrots chopped
  • 2 potatoes diced
  • 1 cup green beans trimmed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 1 tsp Italian herbs

Method
 

  1. Chop carrots, potatoes, and green beans. Dice onion and mince garlic.
  2. Pat the beef dry to help it brown properly.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the beef and cook until browned on all sides.
  5. Add onion and garlic, cooking until soft and fragrant.
  6. Pour in beef broth and diced tomatoes. Stir well.
  7. Add carrots, potatoes, and green beans.
  8. Season with salt, pepper, and Italian herbs. Bring to a boil.
  9. Reduce heat and simmer for 30–40 minutes until beef is tender.
  10. Taste and adjust seasoning as needed.
  11. Let the soup rest for a few minutes, then serve warm.

Notes

This soup can be customized بسهولة by adding extra vegetables like zucchini or corn. It also tastes even better the next day as flavors deepen. Store in the fridge for up to 3 days or freeze for longer storage.
