- Pat the strip steak dry and let it sit at room temperature for 20 minutes.
- Mix olive oil, garlic, lime juice, paprika, salt, and pepper in a bowl to create the marinade.
- Rub the marinade evenly over both sides of the steak.
- Preheat the grill to medium-high heat.
- Grill the steak for 4–5 minutes per side depending on thickness.
- Add sliced jalapenos during the last few minutes and grill until slightly charred.
- Remove steak, top with butter, and let it rest for 5 minutes.
- Slice against the grain and serve topped with grilled jalapenos.
Notes
Adjust spice level by removing jalapeno seeds for a milder flavor or keeping them for extra heat. This recipe also works well with ribeye or sirloin.
