- Wash the goat meat well and drain all excess water.
- Chop the onion, prepare the garlic and ginger paste, and measure all spices so cooking flows smoothly.
- Set a heavy pot over medium heat and add the vegetable oil.
- Add the chopped onion to the hot oil and cook until soft and lightly golden.
- Stir in the garlic and ginger paste and cook until fragrant.
- Add the fresh tomatoes or tomato puree and cook until the mixture thickens into a rich base.
- Mix in the salt, black pepper, paprika, chili powder, curry powder, and thyme. Stir well to build deep flavor.
- Add the goat meat and coat it fully with the sauce.
- Pour in the water or broth, cover the pot, and let it simmer for 45 to 60 minutes until the meat becomes tender.
- Check the seasoning and adjust the salt or spice as needed.
- Cook uncovered for a few more minutes to thicken the sauce.
- Garnish with fresh thyme and serve warm with rice, flatbread, or vegetables.
Notes
For faster cooking, use a pressure cooker and reduce the cooking time to about 25 to 30 minutes. You can also add coconut milk for a creamier version or include potatoes for a more filling dish.
