  • 2 lb goat meat pieces washed and drained
  • 2 tbsp vegetable oil
  • 1 large onion finely chopped
  • 1 tbsp garlic and ginger paste
  • 2 medium fresh tomatoes chopped, or use tomato puree
  • 1/2 cup tomato puree optional substitute for fresh tomatoes
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp chili powder adjust to taste
  • 1 tsp curry powder
  • 1 tsp fresh thyme plus extra for garnish
  • 2 cups water or broth

Method
 

  1. Wash the goat meat well and drain all excess water.
  2. Chop the onion, prepare the garlic and ginger paste, and measure all spices so cooking flows smoothly.
  3. Set a heavy pot over medium heat and add the vegetable oil.
  4. Add the chopped onion to the hot oil and cook until soft and lightly golden.
  5. Stir in the garlic and ginger paste and cook until fragrant.
  6. Add the fresh tomatoes or tomato puree and cook until the mixture thickens into a rich base.
  7. Mix in the salt, black pepper, paprika, chili powder, curry powder, and thyme. Stir well to build deep flavor.
  8. Add the goat meat and coat it fully with the sauce.
  9. Pour in the water or broth, cover the pot, and let it simmer for 45 to 60 minutes until the meat becomes tender.
  10. Check the seasoning and adjust the salt or spice as needed.
  11. Cook uncovered for a few more minutes to thicken the sauce.
  12. Garnish with fresh thyme and serve warm with rice, flatbread, or vegetables.

Notes

For faster cooking, use a pressure cooker and reduce the cooking time to about 25 to 30 minutes. You can also add coconut milk for a creamier version or include potatoes for a more filling dish.
