Ingredients
  

Kebabs
  • 1 lb ground beef
  • 1 small onion grated
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp cumin
Vegetables
  • 1 tbsp olive oil
  • 1 bell pepper cut into chunks
  • 1 zucchini sliced thick

Method
 

  1. Preheat your oven to 400 F and line a sheet pan with parchment paper.
  2. In a bowl, mix the ground beef, grated onion, garlic, salt, pepper, paprika, and cumin until well combined.
  3. Shape the beef mixture into long oval logs and gently press each one onto a skewer.
  4. For best results, chill the shaped kebabs for 10 minutes so they hold their shape better during baking.
  5. Place the kebabs on the sheet pan and arrange the chopped bell pepper and zucchini around them.
  6. Drizzle olive oil over the vegetables and lightly season with a pinch of salt.
  7. Bake for 18 to 22 minutes, turning once halfway through, until the meat is cooked and lightly browned.
  8. Let the kebabs rest for a few minutes before serving so the juices settle nicely.

Notes

Do not pack the meat too tightly on the skewers or the kebabs can turn out dense instead of tender. Cut the vegetables into larger pieces so they stay juicy and roast well. If using wooden skewers, soak them in water for about 15 minutes first to help prevent burning. These kebabs pair beautifully with flatbread, rice, salad, yogurt sauce, or a squeeze of lemon.
