  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon juiced
  • 0.5 tsp chili flakes
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking pan with foil for easy cleanup.
  2. In a small bowl, mix olive oil, paprika, garlic, salt, pepper, chili flakes, and lemon juice to form a marinade.
  3. Rub the marinade all over the chicken quarters. Let it rest for 15 minutes to soak in the flavor.
  4. Place the chicken in the pan skin side up. Roast for 35 to 40 minutes until golden and crispy.
  5. For extra crispiness, broil for 2 to 3 minutes at the end. Watch closely so it does not burn.
  6. Sprinkle with fresh parsley before serving.

Notes

For a twist, grill the chicken instead of roasting for extra smoky flavor. You can also marinate overnight for deeper flavor. Great with roasted potatoes, garlic rice, or salad.
