- Preheat your oven to 400°F (200°C). Line a baking pan with foil for easy cleanup.
- In a small bowl, mix olive oil, paprika, garlic, salt, pepper, chili flakes, and lemon juice to form a marinade.
- Rub the marinade all over the chicken quarters. Let it rest for 15 minutes to soak in the flavor.
- Place the chicken in the pan skin side up. Roast for 35 to 40 minutes until golden and crispy.
- For extra crispiness, broil for 2 to 3 minutes at the end. Watch closely so it does not burn.
- Sprinkle with fresh parsley before serving.
Notes
For a twist, grill the chicken instead of roasting for extra smoky flavor. You can also marinate overnight for deeper flavor. Great with roasted potatoes, garlic rice, or salad.
