  • 12 oz smoked sausage sliced into rounds
  • 8 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 2 tsp Cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a large deep pan over medium heat. Add sliced smoked sausage and cook until browned on both sides.
  2. Add diced onion, bell pepper, and garlic. Cook for about 3 minutes until soft and fragrant.
  3. Sprinkle in Cajun seasoning and stir well so the sausage and vegetables are coated.
  4. Add pasta, chicken broth, heavy cream, and diced tomatoes. Stir everything together.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 12 to 15 minutes, stirring once or twice, until pasta is tender.
  6. Remove lid and stir in shredded cheddar cheese. Let it melt into the sauce until creamy and smooth.
  7. Taste and adjust salt and pepper. Sprinkle with fresh parsley before serving.

Notes

Let the pasta cool completely before storing. Refrigerate in an airtight container for up to 3 days. Add a splash of milk or broth when reheating to restore the creamy texture. You can also freeze it for up to 2 months.
