  • 12 oz smoked sausage sliced
  • 1 cup long grain white rice uncooked
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup chicken broth
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat a large pot or Dutch oven over medium heat. Add olive oil and sliced smoked sausage. Cook for 4 to 5 minutes until lightly browned.
  2. Add chopped onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add the uncooked rice to the pot and stir for about 1 minute to coat the grains in the flavorful oil.
  4. Stir in the black beans, diced tomatoes with their juices, and chicken broth. Bring the mixture to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
  6. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and season with salt and black pepper to taste before serving.

Notes

For extra heat, add a pinch of red pepper flakes. Brown rice can be used instead of white rice, but increase the broth slightly and extend the cooking time. This dish freezes well for up to 2 months and reheats best with a splash of broth to keep the rice moist.
