- Heat a skillet over medium heat and drizzle in olive oil. Add ground lamb and cook until browned, about 5 to 7 minutes.
- Stir in garlic, cumin, coriander, and paprika. Cook for another minute until fragrant.
- Add salt and a squeeze of lemon juice. Adjust seasoning as needed.
- Chop cucumber, tomato, and red onion for the toppings.
- Mix Greek yogurt with lemon juice, garlic, and a pinch of salt to make the sauce.
- Assemble bowls with rice or couscous, top with lamb, vegetables, and yogurt sauce.
- Garnish with chopped parsley or mint before serving.
Notes
For a lighter version, use cauliflower rice instead of regular rice. You can add chickpeas or a soft-boiled egg for extra protein. Store leftovers in the fridge for up to three days the flavors deepen over time.
