Ingredients
  

For the Lamb
  • 1 tbsp olive oil
  • 1 lb ground lamb
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 lemon juice to taste
For the Bowl
  • 2 cups cooked rice or couscous
  • 1/2 cucumber diced
  • 1 tomato diced
  • 1/4 red onion thinly sliced
  • 2 tbsp Greek yogurt for sauce
  • 1 tsp lemon juice for yogurt sauce
  • 1 tbsp fresh parsley or mint chopped

Method
 

  1. Heat a skillet over medium heat and drizzle in olive oil. Add ground lamb and cook until browned, about 5 to 7 minutes.
  2. Stir in garlic, cumin, coriander, and paprika. Cook for another minute until fragrant.
  3. Add salt and a squeeze of lemon juice. Adjust seasoning as needed.
  4. Chop cucumber, tomato, and red onion for the toppings.
  5. Mix Greek yogurt with lemon juice, garlic, and a pinch of salt to make the sauce.
  6. Assemble bowls with rice or couscous, top with lamb, vegetables, and yogurt sauce.
  7. Garnish with chopped parsley or mint before serving.

Notes

For a lighter version, use cauliflower rice instead of regular rice. You can add chickpeas or a soft-boiled egg for extra protein. Store leftovers in the fridge for up to three days  the flavors deepen over time.
