Ingredients
  

Skillet Filling
  • 2 cups leftover taco meat seasoned and cooked
  • 6 small flour or corn tortillas
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup salsa
  • 1 can black beans drained
  • 1 teaspoon olive oil

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a medium oven safe skillet with olive oil.
  2. Warm the leftover taco meat in a small pan over medium heat until heated through.
  3. Cut the tortillas into strips or small squares to make layering easier.
  4. Spread half of the tortilla pieces in the bottom of the skillet. Top with half of the taco meat, half of the black beans, a few spoonfuls of salsa, and a sprinkle of cheese.
  5. Repeat the layers with the remaining tortillas, meat, beans, salsa, and cheese.
  6. Bake for 15 to 20 minutes, until the cheese is melted and bubbly and the edges are lightly golden. Let rest for 5 minutes before serving.

Notes

For extra flavor, add corn, diced bell peppers, or a layer of sour cream before the final cheese topping. You can also swap tortillas for crushed tortilla chips for a crunchier texture.
