Ingredients
  

Dip Base
  • 2 cups black-eyed peas rinsed and drained if canned, cooked if dried
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 can green chilies mild
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp fresh cilantro or parsley chopped, for garnish
For Serving
  • tortilla chips or toasted bread for dipping

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Rinse and drain the black-eyed peas if using canned. If using dried, cook them until tender.
  3. Mash half of the peas in a large bowl. Leave the rest whole for texture.
  4. Add cream cheese, cheddar, green chilies, garlic powder, and onion powder to the bowl. Mix until well combined.
  5. Spread the mixture into the greased baking dish and smooth the top.
  6. Bake for 20–25 minutes until hot and bubbly around the edges.
  7. Top with fresh herbs and serve warm with chips or bread.

Notes

To spice it up, add hot sauce or smoked paprika. You can swap cheeses or use leftover beans like pinto or cannellini. Prepare ahead and refrigerate before baking if needed.
