  • 1 cup diced tomatoes
  • 2 potatoes peeled and diced

Method
 

  1. Heat olive oil in a medium pot over medium heat. Add chopped onion and cook until soft, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes and cook for 3 to 4 minutes.
  4. Add diced potatoes, green peas, and vegetable broth. Stir gently to combine.
  5. Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes until potatoes are tender.
  6. Season with salt and pepper. Taste and adjust before serving warm.

Notes

You can mash a few potatoes for a thicker texture or add herbs like basil or parsley for extra freshness. Serve with crusty bread or over rice for a complete meal.
