Chicken Salad
  • 2 cups cooked chicken shredded or chopped
  • 1/2 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup red onion finely chopped
  • 2 tbsp fresh parsley chopped

Method
 

  1. Place the cooked chicken in a large bowl. Make sure it is cooled and tender.
  2. Add mayonnaise, olive oil, lemon juice, Italian seasoning, salt, and pepper. Mix gently until well combined.
  3. Stir in chopped red onion and parsley. Mix lightly to keep texture chunky.
  4. Taste and adjust seasoning if needed. Chill for 20 minutes for better flavor.
  5. Slice bread or rolls and layer with lettuce and tomato.
  6. Spoon chicken salad on top, close sandwich, and serve immediately.

Notes

Avoid overmixing to keep texture chunky. Add extra mayo or olive oil if the mixture feels dry. Letting it rest enhances flavor.
