  • 1 lb ground beef
  • 12 oz curly egg noodles
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 15 oz can tomato sauce
  • 1 10.5 oz can cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Preheat oven to 350 degrees F and lightly grease a baking dish.
  2. Bring a large pot of salted water to a boil. Cook the curly egg noodles for 6 to 8 minutes until just tender, then drain.
  3. While the noodles cook, heat a large skillet over medium heat. Add the ground beef and cook for 6 to 8 minutes, breaking it apart until fully browned. Drain excess grease.
  4. Add the diced onion to the skillet and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the tomato sauce, cream of mushroom soup, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to combine flavors.
  6. Fold the cooked noodles into the beef mixture until evenly coated. Transfer to the prepared baking dish and spread evenly.
  7. Sprinkle shredded cheddar cheese over the top. Bake for 15 to 20 minutes until the cheese is melted and lightly golden.
  8. Let the casserole rest for 5 minutes before serving.

Notes

To save time, use pre-chopped onions or cook the beef ahead of time and refrigerate until ready to assemble. You can also substitute mozzarella or Monterey Jack cheese for a different flavor profile. Add frozen peas or corn for extra texture and color.
