- Preheat oven to 350 degrees F and lightly grease a baking dish.
- Bring a large pot of salted water to a boil. Cook the curly egg noodles for 6 to 8 minutes until just tender, then drain.
- While the noodles cook, heat a large skillet over medium heat. Add the ground beef and cook for 6 to 8 minutes, breaking it apart until fully browned. Drain excess grease.
- Add the diced onion to the skillet and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Stir in the tomato sauce, cream of mushroom soup, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to combine flavors.
- Fold the cooked noodles into the beef mixture until evenly coated. Transfer to the prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese over the top. Bake for 15 to 20 minutes until the cheese is melted and lightly golden.
- Let the casserole rest for 5 minutes before serving.
Notes
To save time, use pre-chopped onions or cook the beef ahead of time and refrigerate until ready to assemble. You can also substitute mozzarella or Monterey Jack cheese for a different flavor profile. Add frozen peas or corn for extra texture and color.
