- Cook the tortellini according to the package instructions. Drain and set aside.
- Heat a large skillet over medium heat. Add the ground sausage and cook until browned and fully cooked, breaking it into small pieces as it cooks.
- Remove extra grease from the pan if needed. Add the butter and minced garlic to the sausage. Cook for about 1 minute until fragrant.
- Pour in the heavy cream and stir well. Let the sauce simmer gently for 2 to 3 minutes.
- Add the parmesan cheese, salt, black pepper, and Italian seasoning. Stir until the cheese melts and the sauce becomes creamy.
- Add the cooked tortellini to the skillet. Gently stir so every piece is coated with the garlic parmesan sauce.
- If using spinach, add it now and cook for 1 to 2 minutes until wilted.
- Remove from heat and sprinkle chopped parsley on top before serving.
Notes
Use freshly grated parmesan for the smoothest sauce. If the sauce becomes too thick, stir in a small splash of pasta water or milk. Italian sausage adds extra flavor, but regular ground sausage, ground turkey, or ground chicken can also be used. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of milk or cream.
