Ingredients

  • 2 pounds 900 g mixed berries (fresh or frozen)
  • 2/3 cup 130 g sugar
  • 1/4 cup 30 g cornstarch
  • 2 tablespoons lemon juice
  • 1 box yellow cake mix
  • 1/2 cup 115 g butter, melted

Method

  1. Preheat oven to 350°F (175°C).
  2. Spread berries evenly in a 9x13-inch baking dish.
  3. Sprinkle sugar, cornstarch, and lemon juice over berries; stir gently to coat.
  4. In a bowl, stir melted butter into dry cake mix until mixture resembles wet sand.
  5. Sprinkle topping evenly over berries, breaking up large clumps with your fingers.
  6. Bake 45-50 minutes until edges bubble and top is golden brown.
  7. If top browns too quickly after 30 minutes, cover loosely with foil.
  8. Let cobbler rest at room temperature for at least 15 minutes before serving.

Notes

  • Use frozen berries without thawing; add 5-10 minutes to baking time if needed.
  • Swap yellow cake mix with vanilla or white cake mix if desired.
  • Add 1/4 teaspoon cinnamon or nutmeg to the fruit for deeper flavor.
  • Store covered at room temperature up to 2 days or refrigerate up to 4 days.
