Ingredients
  

Chicken and Sauce
  • 1.5 lb boneless skinless chicken breasts or thighs
  • 1/2 cup soy sauce low-sodium preferred
  • 1/3 cup honey or brown sugar
  • 2 cloves garlic minced or 1/2 tsp garlic powder
  • 1 tsp ginger grated or 1/2 tsp ground
Thickening Slurry
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method
 

  1. Place the chicken in your crockpot in a single layer.
  2. In a small bowl, whisk together soy sauce, honey, garlic, and ginger. Pour this mixture over the chicken.
  3. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours until the chicken is tender.
  4. Remove the chicken, shred or slice it, then stir the cornstarch mixture into the sauce.
  5. Let the sauce thicken for 10 minutes. Add the chicken back in and stir to coat.
  6. Serve warm over rice, noodles, or vegetables.

Notes

Use chicken thighs for richer flavor. Add pineapple chunks or vegetables during the last hour of cooking. Freezes well and perfect for meal prep.
