Ingredients
  

Meat Pie Filling
  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 cup milk
  • 1 cup beef broth
  • 1 cup mixed vegetables peas and carrots
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
Pie Crust
  • 2 ready made pie crusts
  • 1 egg beaten, for brushing

Method
 

  1. Preheat oven to 375 F. Place one pie crust into a 9-inch pie dish and press gently into the bottom and sides.
  2. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
  3. Add chopped onion and garlic. Cook for about 3 minutes until soft and fragrant.
  4. Drain excess fat. Add butter and let it melt into the meat mixture.
  5. Sprinkle flour over the meat and stir well. Cook for 1 minute.
  6. Slowly pour in milk and beef broth while stirring. Cook until the mixture thickens into a creamy sauce.
  7. Add mixed vegetables, salt, pepper, and thyme. Simmer for 5 minutes until thick and smooth.
  8. Spoon the filling into the prepared crust and spread evenly.
  9. Place the second crust on top. Seal edges with a fork and cut small slits to vent steam.
  10. Brush with beaten egg and bake for 30 to 35 minutes until golden brown.
  11. Let the pie rest for 10 minutes before slicing to allow the filling to set.

Notes

For a richer flavor, replace half the milk with heavy cream. You can also swap ground beef with pork or diced steak. Make sure the filling is thick before adding it to the crust to avoid a soggy base.
