- In a large bowl, combine garlic, ginger, lemongrass, calamansi juice, soy sauce, brown sugar, fish sauce, pepper, and oil. Mix well.
- Add the chicken and coat thoroughly with the marinade.
- Cover and marinate for at least 2 hours or overnight for best flavor.
- Preheat grill to medium heat and lightly oil the grates.
- Grill chicken for 10–12 minutes per side, turning occasionally.
- Baste with annatto oil while grilling for added flavor and color.
- Cook until chicken is fully done and slightly charred. Let rest before serving.
Notes
Do not skip marinating time as it builds flavor. Use medium heat to avoid burning due to sugar in the marinade. Serve with rice and a citrus soy dipping sauce for best results.
