- In a bowl, mix yogurt, chili powder, turmeric, salt, and ginger-garlic paste. Coat chicken pieces well and let them marinate for at least 15 minutes.
- Heat ghee in a wide pan over medium flame. Once it melts, add the marinated chicken.
- Cook until the chicken turns golden on all sides, about 10 to 12 minutes. Stir often so nothing burns.
- Sprinkle a little water if needed, cover, and cook another 5 minutes until tender.
- Add lemon juice, toss everything, and let the ghee roast coat the chicken with a glossy layer.
- Serve hot with steamed rice or soft chapati. It smells incredible.
Notes
Use homemade ghee for best flavor. For a milder dish, reduce the chili powder. Add a spoon of coconut milk at the end for a twist. This also works great with shrimp or paneer as a variation.
