Ingredients
  

Marinade
  • 500 g boneless chicken pieces
  • 1/2 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • to taste salt

  • 2 tbsp ghee
  • 1 tbsp lemon juice freshly squeezed

Method
 

  1. In a bowl, mix yogurt, chili powder, turmeric, salt, and ginger-garlic paste. Coat chicken pieces well and let them marinate for at least 15 minutes.
  2. Heat ghee in a wide pan over medium flame. Once it melts, add the marinated chicken.
  3. Cook until the chicken turns golden on all sides, about 10 to 12 minutes. Stir often so nothing burns.
  4. Sprinkle a little water if needed, cover, and cook another 5 minutes until tender.
  5. Add lemon juice, toss everything, and let the ghee roast coat the chicken with a glossy layer.
  6. Serve hot with steamed rice or soft chapati. It smells incredible.

Notes

Use homemade ghee for best flavor. For a milder dish, reduce the chili powder. Add a spoon of coconut milk at the end for a twist. This also works great with shrimp or paneer as a variation.
