  • 1 whole chicken or bone-in pieces
  • 2 tbsp olive oil
  • 3 cloves garlic smashed
  • 1 lemon sliced
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp fresh herbs such as rosemary or thyme

Method
 

  1. Preheat your oven to 425°F. Warm your cast iron skillet over medium heat on the stovetop.
  2. Pat the chicken dry with paper towels. Drizzle with olive oil and season with salt, pepper, and herbs.
  3. Sear the chicken skin-side down in the skillet for 5 minutes until golden brown.
  4. Flip the chicken, add garlic and lemon slices around it, and transfer the skillet to the oven.
  5. Roast for 25 to 30 minutes, or until internal temperature reaches 165°F. Let it rest for 10 minutes before slicing.

Notes

Use chicken thighs if you prefer darker meat. Add small potatoes or carrots to roast with the chicken. For added flavor, try a drizzle of honey garlic sauce or sprinkle chili flakes for heat.
