- Preheat your oven to 375 F. Lightly grease a large baking dish.
- Wash and trim the green beans. Cut the potatoes into even cubes so they cook evenly.
- Place the potatoes, green beans, sliced sausage, and chopped onion into the baking dish.
- Drizzle olive oil over everything. Add garlic, salt, pepper, paprika, and Italian seasoning.
- Toss well so the vegetables and sausage are fully coated with oil and spices.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for another 15 to 20 minutes, until the potatoes are tender and slightly golden on the edges.
- Let the casserole rest for 5 minutes before serving to allow the flavors to settle.
Notes
For softer green beans, blanch them in boiling water for 3 minutes before baking. You can also add shredded cheddar cheese during the last 10 minutes for a creamy finish, or sprinkle red pepper flakes for heat.
