Casserole
  • 1 pound smoked sausage sliced into rounds
  • 1 pound fresh green beans trimmed
  • 4 medium potatoes cut into small cubes
  • 1 small onion chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning

Method
 

  1. Preheat your oven to 375 F. Lightly grease a large baking dish.
  2. Wash and trim the green beans. Cut the potatoes into even cubes so they cook evenly.
  3. Place the potatoes, green beans, sliced sausage, and chopped onion into the baking dish.
  4. Drizzle olive oil over everything. Add garlic, salt, pepper, paprika, and Italian seasoning.
  5. Toss well so the vegetables and sausage are fully coated with oil and spices.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 15 to 20 minutes, until the potatoes are tender and slightly golden on the edges.
  8. Let the casserole rest for 5 minutes before serving to allow the flavors to settle.

Notes

For softer green beans, blanch them in boiling water for 3 minutes before baking. You can also add shredded cheddar cheese during the last 10 minutes for a creamy finish, or sprinkle red pepper flakes for heat.
