  • 12 oz Cajun sausage or kielbasa sliced into bite-sized pieces
  • 4 potatoes thinly sliced
  • 1 onion sliced
  • 1.5 cups heavy cream or milk
  • 1 tbsp Cajun seasoning adjust to taste
  • 1 tsp salt to taste
  • 1 cup shredded cheese optional, for topping

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Thinly slice the potatoes and onion. Cut the sausage into bite-sized pieces.
  3. Layer half of the potatoes in the bottom of the dish. Top with half of the sausage and onion. Sprinkle with Cajun seasoning and salt.
  4. Repeat the layers with the remaining ingredients and pour the cream or milk evenly over the top.
  5. Cover with foil and bake for 45 minutes.
  6. Uncover, sprinkle with cheese (if using), and bake for another 15–20 minutes until bubbly and golden on top.

Notes

You can prepare this dish a few hours ahead and keep it in the fridge until ready to bake. If you prefer ground sausage, that works great too. To save time, slice the potatoes earlier and store in water until use.
