  • 500 g beef chuck cut into chunks
  • 2 cups baby potatoes
  • 2 carrots sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides.
  2. Remove the beef and set aside. In the same pot, cook onion and garlic until soft.
  3. Stir in tomato paste and cook for 1–2 minutes to deepen flavor.
  4. Return the beef to the pot and add the broth. Stir to combine.
  5. Add potatoes and carrots, ensuring they are mostly covered with liquid.
  6. Bring to a simmer, cover, and cook on low heat for 45–60 minutes until beef is tender.
  7. Taste and adjust seasoning with salt and pepper before serving.

Notes

Let the stew rest for 10 minutes before serving to enhance flavor. You can swap or add vegetables like peas or green beans depending on what you have.
