Method
- Cut the chicken breasts into even bite size cubes so they cook evenly.
- In a bowl mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
- In another bowl beat the eggs. Dip each chicken piece into the egg, then coat it in the breadcrumb mixture.
- Preheat the air fryer to 380 F and lightly spray the basket with cooking spray.
- Place the coated chicken pieces in a single layer in the air fryer basket.
- Air fry for 8 to 10 minutes, shaking the basket halfway through cooking until golden and crisp.
- Spoon a small amount of marinara sauce over each piece and sprinkle mozzarella cheese on top.
- Return to the air fryer for about 2 minutes until the cheese melts.
- Remove from the air fryer, garnish with fresh parsley if desired, and serve warm.
Notes
Avoid overcrowding the air fryer basket to keep the chicken crispy. Use a light amount of marinara sauce so the crunchy coating stays crisp.
