Ingredients
  

Main Ingredients
  • 1 pound ground turkey
  • 1 cup low sodium soy sauce
  • 1 cup water
  • 1 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 1 tbsp honey
  • 2 tsp minced garlic
  • 1 tsp grated ginger
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • cooked rice for serving
  • sesame seeds for garnish
  • green onions for garnish

Method
 

  1. Break the ground turkey into small pieces and place it in the crockpot.
  2. Pour in soy sauce, water, rice vinegar, brown sugar, honey, garlic, and ginger. Stir lightly to coat the turkey.
  3. Add the sliced carrots and peppers on top. Do not stir too much so the turkey stays in place.
  4. Cover the crockpot and cook on low for 8 hours.
  5. After cooking, stir the turkey to break it into tender pieces. Add the cornstarch mixture and stir again.
  6. Turn the crockpot to high and cook for 10 more minutes until the sauce thickens.
  7. Serve the teriyaki turkey over warm rice. Add sesame seeds and green onions on top.

Notes

You can freeze all ingredients in a bag to make this a freezer meal. Use leftover veggies, or add mushrooms, pineapple, or sesame oil for extra flavor.
