  • 1/4 cup honey
  • 1/4 cup soy sauce use low-sodium if desired
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated, optional
  • 2 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger.
  2. Pat the chicken thighs dry and season lightly with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the chicken thighs and cook for 5 to 6 minutes per side until golden brown.
  4. Pour the honey soy mixture over the chicken and simmer for another 5 minutes until the sauce thickens and coats the chicken.
  5. Check that the chicken is cooked through (internal temp 165°F), then remove from heat and let rest for a few minutes before serving.

Notes

For a lighter version, use low-sodium soy sauce and serve with steamed vegetables or rice. You can swap honey with maple syrup or bake the chicken at 400°F for 25 minutes for an oven version. Leftovers can be stored in the fridge for up to three days or frozen for two months.
