  • 2 cups cooked rice preferably day-old
  • 1 cup chicken breast diced, boneless and skinless
  • 2 eggs beaten
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil divided use
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 cup mixed vegetables carrots, peas, corn, etc.

  • Wok or Large Skillet

Method
 

  1. Heat a large pan or wok over medium-high heat and add half the sesame oil.
  2. Add diced chicken and cook until golden brown and cooked through, about 5–6 minutes.
  3. Push chicken to one side. Crack eggs into the pan and scramble until just set.
  4. Add garlic and onion, and sauté for 1 minute until fragrant.
  5. Stir in the mixed vegetables and cook for another 2 minutes until slightly softened.
  6. Add the cooked rice and pour soy sauce over everything. Mix well and cook until heated through.
  7. Drizzle with the remaining sesame oil, stir to combine, and serve hot.

Notes

Use cold, day-old rice to get that perfect fried rice texture. You can easily swap the chicken with tofu or shrimp, and feel free to add extra sauces or chili for a flavor twist.
