Method
- Heat a large pan or wok over medium-high heat and add half the sesame oil.
- Add diced chicken and cook until golden brown and cooked through, about 5–6 minutes.
- Push chicken to one side. Crack eggs into the pan and scramble until just set.
- Add garlic and onion, and sauté for 1 minute until fragrant.
- Stir in the mixed vegetables and cook for another 2 minutes until slightly softened.
- Add the cooked rice and pour soy sauce over everything. Mix well and cook until heated through.
- Drizzle with the remaining sesame oil, stir to combine, and serve hot.
Notes
Use cold, day-old rice to get that perfect fried rice texture. You can easily swap the chicken with tofu or shrimp, and feel free to add extra sauces or chili for a flavor twist.
