- Heat the olive oil in a large pan over medium heat.
- Add the sliced sausage and cook until it turns golden on the edges.
- Remove the sausage from the pan and set it aside.
- Add the sliced leeks to the pan and cook until they turn soft and sweet.
- Stir in the garlic and cook for one minute until fragrant.
- Return the sausage to the pan and mix it with the leeks.
- Add the butter beans, paprika, thyme, salt, and pepper.
- Pour in the chicken broth and let the mixture simmer for 10 to 12 minutes so the flavors come together.
- Stir gently and taste to adjust the seasoning.
- Turn off the heat and garnish with fresh parsley before serving.
Notes
Use fresh leeks for best texture. Don’t over-stir the beans to avoid breaking them. Store leftovers in an airtight container for up to 3 days in the fridge.
