  • 2 cups butter beans cooked, drained and rinsed if canned
  • 2 leeks white and light green parts only, thinly sliced
  • 8 oz smoked sausage sliced into coins
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the sliced sausage and cook until it turns golden on the edges.
  3. Remove the sausage from the pan and set it aside.
  4. Add the sliced leeks to the pan and cook until they turn soft and sweet.
  5. Stir in the garlic and cook for one minute until fragrant.
  6. Return the sausage to the pan and mix it with the leeks.
  7. Add the butter beans, paprika, thyme, salt, and pepper.
  8. Pour in the chicken broth and let the mixture simmer for 10 to 12 minutes so the flavors come together.
  9. Stir gently and taste to adjust the seasoning.
  10. Turn off the heat and garnish with fresh parsley before serving.

Notes

Use fresh leeks for best texture. Don’t over-stir the beans to avoid breaking them. Store leftovers in an airtight container for up to 3 days in the fridge.
