Crockpot Chicken and Stuffing

Ingredients
  

  • 1 1/2 pounds boneless chicken breast sliced horizontally
  • 1 6-ounce box herb stuffing mix (or 2 cups cubed bread)
  • 2 cups chicken broth
  • 3 tablespoons butter melted
  • 1/2 medium onion diced
  • 1 stalk celery chopped
  • Salt and pepper to taste

Method
 

  1. Slice each chicken breast horizontally to create thinner, even pieces.
  2. Dice onion and celery into small pieces.
  3. Melt butter in a small bowl and measure out chicken broth.
  4. Arrange sliced chicken on the bottom of the crockpot. Season with salt and pepper, then scatter onion and celery on top.
  5. Pour 2 cups chicken broth over the chicken layer.
  6. Sprinkle dry stuffing mix evenly over the broth, then drizzle melted butter across the top.
  7. Cover and cook on low for 4 to 5 hours.
  8. Check chicken by piercing the thickest piece; it should shred easily and show no pink inside.
  9. Gently stir with a wooden spoon to combine stuffing with broth, breaking up clumps without shredding the chicken.
  10. Taste and adjust seasoning if needed, then serve straight from the crockpot into bowls.

Notes

  • Swap chicken thighs for richer flavor and more forgiving cooking.
  • Add diced carrots or peas during the last 30 minutes for texture.
  • Use homemade stuffing: cube day-old bread with dried herbs and melted butter.
  • Stir in 1/2 cup heavy cream or sour cream after cooking for a creamier dish.
