Ingredients
  

Potatoes
  • 4 large russet potatoes scrubbed clean
  • olive oil for rubbing potatoes
Cheeseburger Filling
  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • salt to taste
  • black pepper to taste
Optional Toppings
  • diced pickles
  • chopped parsley
  • sour cream

Method
 

  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Rub each potato with olive oil, sprinkle with salt, and place on the baking sheet. Bake for 45 to 55 minutes until fork tender and crispy on the outside.
  3. While the potatoes bake, heat a large skillet over medium heat. Add the ground beef and cook for 6 to 8 minutes, breaking it apart until browned.
  4. Add chopped onion and minced garlic. Cook for 3 to 4 minutes until softened.
  5. Stir in ketchup, mustard, salt, and black pepper. Simmer for 2 to 3 minutes to blend the flavors.
  6. Slice the baked potatoes open and gently fluff the insides with a fork.
  7. Fill each potato with the seasoned ground beef mixture, top with shredded cheddar cheese, and return to the oven for 5 to 7 minutes until melted.
  8. Add optional toppings as desired and serve warm.

Notes

You can microwave the potatoes for 8 to 10 minutes before finishing in the oven to save time. The ground beef mixture can also be prepared a day in advance and refrigerated until ready to assemble.
