- Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Heat a large skillet over medium heat and cook the ground beef until it begins to brown, breaking it into small pieces.
- Add diced onion and minced garlic to the skillet and cook for 3–4 minutes until softened.
- Season the beef mixture with salt, pepper, chili powder, and cumin. Stir well to combine.
- Drain excess grease and spread the beef mixture evenly in the prepared baking dish.
- Lay the drained whole green chiles evenly over the beef layer.
- Sprinkle the Monterey Jack cheese evenly over the chiles.
- In a bowl whisk together the eggs, milk, flour, and baking powder until smooth.
- Pour the egg mixture evenly over the casserole.
- Sprinkle shredded cheddar cheese over the top.
- Bake for 35–40 minutes until the center is set and the top becomes golden and lightly crisp.
- Let the casserole rest for 10 minutes before slicing and serving.
Notes
Use freshly shredded cheese for the best melting texture. For extra spice, add diced jalapenos or use pepper jack cheese. This casserole can be assembled ahead and refrigerated for up to 24 hours before baking.
