  • 3 lb corned beef brisket with seasoning packet
  • 2 tbsp olive oil or melted butter
  • 1 tsp black pepper to taste

Method
 

  1. Remove the corned beef brisket from the package and pat it dry with paper towels.
  2. Place the brisket on a baking tray or in a slow cooker insert.
  3. Sprinkle the seasoning packet evenly over the surface.
  4. For oven cooking, bake covered at 300°F (150°C) for 3 to 4 hours until tender.
  5. For slow cooker corned beef, cook on low for 8 to 9 hours until tender.
  6. Once tender, uncover and brush the top with olive oil or melted butter.
  7. Increase oven heat to 425°F (220°C) and roast for 10 to 12 minutes until crisp on top.
  8. Let the meat rest for 10 minutes before slicing.
  9. Serve with cabbage, potatoes, or your favorite vegetables.

Notes

To save time, cook the brisket ahead and crisp it right before serving. Leftovers are great in sandwiches or breakfast hashes.
