- Heat a large skillet over medium heat. Add the ground sausage and cook until browned and fully cooked, breaking it into small pieces. Drain excess grease if needed.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream. Stir well and bring to a gentle simmer.
- Add the sun dried tomatoes and Italian seasoning. Let simmer for 3 to 4 minutes until slightly thickened.
- Stir in the cheese tortellini. Cover and cook for 5 to 7 minutes, or until tender according to package directions.
- Add the spinach and Parmesan cheese. Stir until the spinach wilts and the cheese melts into the sauce.
- Taste and season with salt and black pepper. Simmer for 1 to 2 more minutes until creamy and smooth. Serve warm.
Notes
If the sauce becomes too thick, add a splash of broth or milk to loosen it. Freshly grated Parmesan melts more smoothly than pre shredded cheese. You can substitute kale for spinach if desired.
