  • 12 oz smoked sausage sliced
  • 8 oz pasta any short pasta
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese shredded
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Method
 

  1. Boil the pasta until tender, then drain and set aside.
  2. Warm the olive oil in a large pan, then add the sliced sausage and cook until lightly browned.
  3. Stir in the onion and cook until soft. Add the garlic and cook until fragrant.
  4. Pour in the chicken broth and bring it to a gentle simmer.
  5. Lower the heat and stir in the heavy cream. Let it thicken slightly.
  6. Add the Parmesan cheese and Italian seasoning. Stir until the sauce is smooth.
  7. Add the cooked pasta and toss until coated. Taste and season with salt and pepper.
  8. Let the pasta rest for one minute so the sauce can cling to each piece.

Notes

Use short pasta shapes for best texture. If the sauce thickens too much, add a splash of broth. Add cheese slowly to avoid clumping. Brown sausage well for the best flavor.
