  • 1 lb smoked sausage sliced into thick rounds
  • 1.5 lb baby potatoes halved
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil if desired for easy cleanup.
  2. In a large bowl, combine halved baby potatoes and sliced smoked sausage.
  3. Drizzle with olive oil and sprinkle ranch seasoning, salt, and pepper. Toss until well coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Bake for 35–40 minutes, stirring halfway through, until potatoes are tender and golden.
  6. Remove from oven and gently stir in sour cream.
  7. Sprinkle cheddar cheese on top and return to oven for 5–7 minutes, until melted and bubbly.
  8. Serve warm and enjoy as a complete meal.

Notes

You can customize this recipe by using turkey sausage, adding vegetables like broccoli or green beans, or swapping in different cheeses such as pepper jack for extra kick. Also works great in a slow cooker on low for 4–5 hours.
