Ingredients
  

Meatloaf Base
  • 1 1/2 lbs ground beef
  • 1 cup mushrooms finely chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
Filling and Glaze
  • 6 slices Swiss cheese
  • 1/3 cup ketchup for glaze

Method
 

  1. Preheat your oven to 375 F. Lightly grease a loaf pan or line a baking sheet with parchment.
  2. In a skillet, cook the chopped mushrooms and onion for about 5 minutes until soft. Add the garlic and cook for another minute, then allow the mixture to cool slightly.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, salt, and pepper.
  4. Add the cooled mushroom mixture to the bowl and gently mix until everything is just combined.
  5. Press half of the meat mixture into the prepared loaf pan. Lay slices of Swiss cheese across the center.
  6. Top with the remaining meat mixture and shape into a loaf.
  7. Spread ketchup evenly over the top as a glaze.
  8. Bake for 45 to 55 minutes or until the internal temperature reaches 160 F.
  9. Let the meatloaf rest for 10 minutes before slicing to keep it juicy.

Notes

For extra richness, mix a spoonful of sour cream into the mushroom mixture. You can also substitute ground turkey or chicken for a lighter version, but add a little extra milk to keep the meat tender.
