Method
- Preheat your oven to 375 F. Lightly grease a loaf pan or line a baking sheet with parchment.
- In a skillet, cook the chopped mushrooms and onion for about 5 minutes until soft. Add the garlic and cook for another minute, then allow the mixture to cool slightly.
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, salt, and pepper.
- Add the cooled mushroom mixture to the bowl and gently mix until everything is just combined.
- Press half of the meat mixture into the prepared loaf pan. Lay slices of Swiss cheese across the center.
- Top with the remaining meat mixture and shape into a loaf.
- Spread ketchup evenly over the top as a glaze.
- Bake for 45 to 55 minutes or until the internal temperature reaches 160 F.
- Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
Notes
For extra richness, mix a spoonful of sour cream into the mushroom mixture. You can also substitute ground turkey or chicken for a lighter version, but add a little extra milk to keep the meat tender.
