Method
- Slice the kielbasa into round pieces about half an inch thick so they cook evenly.
- Peel and chop the potatoes into bite sized cubes, keeping the pieces similar in size.
- Add the potatoes, sliced kielbasa, chopped onion, and minced garlic into the crockpot.
- Pour the chicken broth over the ingredients and gently stir to combine.
- Place chunks of cream cheese on top of the mixture so it slowly melts into the sauce.
- Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the potatoes are tender.
- About 20 minutes before serving, stir in the shredded cheese until the sauce becomes creamy and smooth.
- Taste and adjust seasoning with salt and pepper, then gently stir and serve warm.
Notes
You can swap regular kielbasa with turkey kielbasa for a lighter version. Adding carrots or bell peppers can make the dish even heartier. Leftovers can also be baked later with extra cheese to turn the dish into a quick casserole.
