  • 14 oz kielbasa sausage sliced into rounds
  • 4 cups potatoes peeled and cubed
  • 1 cup chicken broth
  • 1 onion chopped
  • 2 cloves garlic minced

  • 8 oz cream cheese cut into chunks
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

  1. Slice the kielbasa into round pieces about half an inch thick so they cook evenly.
  2. Peel and chop the potatoes into bite sized cubes, keeping the pieces similar in size.
  3. Add the potatoes, sliced kielbasa, chopped onion, and minced garlic into the crockpot.
  4. Pour the chicken broth over the ingredients and gently stir to combine.
  5. Place chunks of cream cheese on top of the mixture so it slowly melts into the sauce.
  6. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the potatoes are tender.
  7. About 20 minutes before serving, stir in the shredded cheese until the sauce becomes creamy and smooth.
  8. Taste and adjust seasoning with salt and pepper, then gently stir and serve warm.

Notes

You can swap regular kielbasa with turkey kielbasa for a lighter version. Adding carrots or bell peppers can make the dish even heartier. Leftovers can also be baked later with extra cheese to turn the dish into a quick casserole.
