- Heat olive oil in a large skillet over medium heat. Add the ground sausage and cook until browned, breaking it up as it cooks.
- Add chopped onion and cook until soft. Stir in garlic and cook for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir often so the sauce stays smooth.
- Cook the tortellini according to the package directions in a separate pot. Drain well.
- Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce.
- Sprinkle in Parmesan cheese, salt, and pepper. Stir until melted and creamy. Serve hot.
Notes
Try adding spinach, peas, or mushrooms for extra veggies. For a lighter version, use half-and-half and a splash of pasta water instead of heavy cream.
