  • 1 tbsp olive oil
  • 1 lb Italian ground sausage
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 20 oz cheese tortellini refrigerated or frozen
  • 1/2 cup Parmesan cheese grated
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the ground sausage and cook until browned, breaking it up as it cooks.
  2. Add chopped onion and cook until soft. Stir in garlic and cook for about 30 seconds until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir often so the sauce stays smooth.
  4. Cook the tortellini according to the package directions in a separate pot. Drain well.
  5. Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce.
  6. Sprinkle in Parmesan cheese, salt, and pepper. Stir until melted and creamy. Serve hot.

Notes

Try adding spinach, peas, or mushrooms for extra veggies. For a lighter version, use half-and-half and a splash of pasta water instead of heavy cream.
