  • 1 cup long grain white rice rinsed until clear
  • 2 cups beef broth
  • 1 cup milk whole or 2%
  • 1 cup shredded sharp cheddar cheese plus more for topping
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Rinse the rice under cool water until clear, then drain and set aside.
  3. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  4. Add chopped onion and minced garlic to the beef. Cook until soft and fragrant.
  5. Stir in rice, broth, and milk. Bring the mixture to a gentle simmer, stirring occasionally.
  6. Transfer the mixture to the prepared baking dish. Cover tightly with foil and bake for 35–40 minutes until the rice is tender.
  7. Remove foil, stir gently to release steam, and sprinkle cheddar cheese over the top.
  8. Bake uncovered for 10–12 minutes until the cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving for the creamiest texture.

Notes

For extra color and nutrition, add steamed broccoli or peas before baking. You can also prepare the beef mixture a day in advance and assemble before dinner. To cut baking time, use pre-cooked rice and bake uncovered for 20 minutes.
