Ingredients
  

Beef Layer
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Cream Layer
  • 1 cup sour cream
  • 1/2 cup cream cheese softened
Vegetable & Topping Layer
  • 2 medium zucchini sliced into thin rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated cheddar cheese

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish with oil or cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2 to 3 minutes until soft.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the ground beef. Break it apart with a spoon and cook until browned. Drain any excess grease.
  5. Stir in salt, pepper, and Italian seasoning. Turn off the heat.
  6. In a mixing bowl, combine sour cream and softened cream cheese until smooth and creamy.
  7. Layer half of the zucchini slices in the prepared baking dish. Spread half of the beef mixture on top.
  8. Spoon half of the cream mixture over the beef layer and spread gently to cover.
  9. Repeat the layers with the remaining zucchini, beef mixture, and cream mixture.
  10. Sprinkle mozzarella and cheddar cheese evenly over the top.
  11. Bake uncovered for 25 to 30 minutes until the cheese is melted and golden brown.
  12. Let the casserole rest for 5 to 10 minutes before serving to help it set.

Notes

If zucchini releases too much moisture, lightly salt the slices and let them sit for 10 minutes, then pat dry before layering. You can also add mushrooms, spinach, paprika, or red pepper flakes for extra flavor.
