- Pat the lamb chops dry and rub with olive oil, salt, and black pepper.
- Mix minced garlic with lemon juice and set aside.
- Preheat the grill to medium high heat.
- Grill lamb chops for 4 to 5 minutes per side until cooked to your liking.
- In a pan, heat cream and add garlic mixture. Stir gently.
- Add pineapple chunks and simmer for 5 to 7 minutes until slightly thickened.
- Remove lamb chops from grill and let them rest for 5 minutes.
- Spoon the creamy pineapple sauce over the lamb and garnish with fresh parsley before serving.
Notes
You can swap pineapple with mango for a different sweetness or add chili flakes for a spicy twist. This recipe also works well with pan-seared lamb if you do not have a grill.
