Ingredients
  

Lamb Chops
  • 4 lamb chops thick cut
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
Creamy Pineapple Sauce
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup pineapple chunks fresh or canned
  • 1 tbsp lemon juice
  • fresh parsley for garnish

Method
 

  1. Pat the lamb chops dry and rub with olive oil, salt, and black pepper.
  2. Mix minced garlic with lemon juice and set aside.
  3. Preheat the grill to medium high heat.
  4. Grill lamb chops for 4 to 5 minutes per side until cooked to your liking.
  5. In a pan, heat cream and add garlic mixture. Stir gently.
  6. Add pineapple chunks and simmer for 5 to 7 minutes until slightly thickened.
  7. Remove lamb chops from grill and let them rest for 5 minutes.
  8. Spoon the creamy pineapple sauce over the lamb and garnish with fresh parsley before serving.

Notes

You can swap pineapple with mango for a different sweetness or add chili flakes for a spicy twist. This recipe also works well with pan-seared lamb if you do not have a grill.
