Cut chicken into bite-sized pieces, dice onion and celery, mince garlic, and measure broth and cream.
Melt butter in a large pot over medium heat. Add onion and celery; cook 5 minutes until softened.
Stir in garlic and cook 30 seconds until fragrant.
Slowly pour in broth while stirring constantly. Bring to a simmer over medium-high heat.
Add chicken pieces and simmer 8-10 minutes until cooked through.
Stir in thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Taste and adjust.
Reduce heat to low. Slowly pour in heavy cream while stirring constantly.
Add egg noodles and simmer 5-6 minutes until tender. Taste and adjust seasoning. Serve hot.
