Ingredients
  

Casserole Base
  • 2 cups cooked egg noodles or rotini pasta
  • 2 cups boneless skinless chicken breasts cut into bite-sized pieces
  • 1 cup plain Greek yogurt
  • 1 can cream of chicken soup approx. 10.5 oz
  • 1 cup shredded mild cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp olive oil for greasing the baking dish

Method
 

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with olive oil.
  2. Cut chicken into bite-size pieces and season with salt and pepper.
  3. Cook pasta until just tender, then drain well.
  4. In a large bowl, mix yogurt, cream of chicken soup, garlic powder, and onion powder until smooth.
  5. Fold in cooked pasta and seasoned chicken until everything is well coated.
  6. Spoon mixture into prepared baking dish and top with shredded cheese evenly.
  7. Bake uncovered for 30–35 minutes, until bubbly and lightly golden on top.
  8. Let rest for 10 minutes before serving to allow sauce to set.

Notes

For quicker prep, use rotisserie chicken and pre-shredded cheese. You can also assemble the dish a day ahead and refrigerate before baking. Try adding steamed broccoli for a veggie twist or swap Greek yogurt for sour cream for extra richness.
