  • 1 lb breakfast sausage
  • 2 cups fresh spinach chopped
  • 2 cups frozen hash brown potatoes thawed
  • 8 large eggs
  • 1 cup milk
  • 1 1/2 cups cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup onion diced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. Heat olive oil in a skillet over medium heat. Add the breakfast sausage and cook until browned, breaking it into small pieces.
  3. Add diced onion and chopped spinach to the skillet. Cook for about 2 minutes until the spinach wilts and the onion softens.
  4. Spread the thawed hash brown potatoes evenly in the prepared baking dish.
  5. Spoon the sausage, spinach, and onion mixture over the potatoes.
  6. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined.
  7. Pour the egg mixture evenly over the casserole ingredients.
  8. Sprinkle cheddar and mozzarella cheese evenly across the top.
  9. Bake for 35–40 minutes until the eggs are fully set and the top is golden.
  10. Let the casserole rest for about 5 minutes before slicing and serving.

Notes

This casserole can be assembled the night before and baked in the morning. You can also substitute bacon, ham, or turkey sausage for the sausage and add vegetables like bell peppers or mushrooms for extra flavor.
