- Preheat your oven to 400°F. Grease a baking dish with olive oil. Pat chicken breasts dry and season with salt, pepper, and garlic powder.
- Heat a skillet over medium heat with olive oil. Sear chicken breasts for about 3 minutes per side until lightly golden.
- Transfer seared chicken into the prepared baking dish in a single layer.
- In a bowl, mix sour cream, mozzarella, half the parmesan, and Italian seasoning until smooth. Spread over each chicken breast.
- Combine the remaining parmesan with melted butter and sprinkle on top of the chicken.
- Bake uncovered for 20–25 minutes until the chicken is cooked through and the topping is golden and bubbly.
- Let rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
For best results, use medium-sized chicken breasts and freshly grated parmesan. Searing the chicken helps lock in moisture and flavor. You can prepare the dish in advance and bake later. Store leftovers in the fridge for up to 3 days.
