  • 1 sheet puff pastry thawed if frozen
  • 1 lb ground sausage herbed or mild
  • 1 small onion minced
  • 2 cloves garlic minced
  • 1/3 cup bread crumbs
  • 1 egg beaten
  • 1 tbsp fresh herbs sage or thyme, chopped
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the sausage, onion, garlic, bread crumbs, herbs, salt, and pepper. Mix well with your hands until fully blended.
  3. On a lightly floured surface, roll out the puff pastry if needed. Place the sausage mixture down the center, shaping it into a long log.
  4. Brush the edges with beaten egg. Fold the pastry over the filling, sealing tightly. Place seam-side down on the baking tray.
  5. Brush the top with more egg. Optionally, decorate with pastry cutouts.
  6. Bake for 25–30 minutes or until golden and puffed. Let rest for 5 minutes before slicing and serving.

Notes

  • You can assemble the roll a day ahead and refrigerate it unbaked.
  • For variation, try adding a spoonful of cranberry sauce before sealing.
  • Leftovers reheat best in the oven to maintain crispness.
