Ingredients

Salmon Fillets
  • 2 salmon fillets (skin‑on) fresh, approx. 180–200 g each
Glaze
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice freshly squeezed
Garnish & Optional
  • fresh dill, chopped for garnish
  • fresh parsley, chopped for garnish
  • fresh cranberries optional, scattered around platter for color

Equipment

  • Baking Sheet
  • Parchment Paper

Method

  1. Preheat oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the olive oil, honey, Dijon mustard, minced garlic and lemon juice to make the glaze.
  3. Place the salmon fillets skin‑side down on the prepared baking sheet. Brush generously with the glaze, ensuring each fillet is well coated. Sprinkle with salt, pepper and chopped herbs (dill and parsley).
  4. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork and the glaze has caramelized at the edges.
  5. Transfer the salmon to a serving platter. Scatter fresh cranberries around the fish and a little extra chopped herbs. Optionally drizzle a touch more honey or lemon juice just before serving.

Notes

  • If you’d like an even lighter version, skip the honey and use just a lemon‑herb glaze instead.
  • You can also substitute pomegranate seeds for cranberries for a jewel‑like garnish.
  • Leftover glaze makes a great topping for roasted vegetables or shrimp another day.
