Christmas Pizza Bites are festive, easy-to-make appetizers featuring crispy dough, gooey mozzarella, and cheerful toppings like pepperoni and bell peppers. Ingredients
  

Dough and base
  • 1 lb refrigerated pizza dough store‑bought, thawed if needed
  • 2 tbsp olive oil for brushing
  • 1 tsp Italian seasoning
Toppings
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni or diced bell peppers choose for festive red/green look
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced

Method
 

  1. Preheat your oven to 400°F (about 200°C) and line a baking sheet with parchment paper. Lightly flour your counter before rolling out the pizza dough.
  2. Roll out the refrigerated pizza dough on the floured surface to about 1/4‑inch thickness. Then use a 2‑inch round cookie cutter or a knife to cut out circles.
  3. Spoon about 1 teaspoon of pizza sauce onto each dough circle. Then sprinkle shredded mozzarella cheese and add your festive toppings (mini pepperoni, red and green bell pepper pieces).
  4. Either leave the bites open like mini‑pizzas or gently fold each dough circle in half (or into a dumpling shape) and pinch the edges lightly to prevent cheese from escaping during baking.
  5. Brush each pizza bite with olive oil, sprinkle Italian seasoning on top, then place the baking sheet in the preheated oven. Bake for 12 to 15 minutes until golden brown and cheese is bubbly.
  6. Let the bites cool for a few minutes on the baking sheet, then transfer to a serving platter. Serve warm with warm pizza sauce or ranch dip on the side.

Notes

  • Feel free to swap any of the toppings with whatever you have lying around.
  • Use a vegetarian version with mushrooms or spinach, or add sausage or beef  bacon bits for a heartier version.
  • These also freeze well, just bake straight from frozen for about 10 minutes.
