Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth low sodium
  • 2 cups cooked chicken shredded
  • 1 tsp Italian seasoning
Finish
  • 12 oz cheese tortellini fresh or refrigerated
  • 2 cups fresh spinach
  • salt and pepper to taste

Method
 

  1. Heat olive oil and butter in a large pot over medium heat. Add chopped onions, carrots, and celery. Sauté until vegetables begin to soften.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a gentle boil. Add shredded chicken and Italian seasoning.
  4. Add tortellini and cook for 7 to 9 minutes, or until tender.
  5. Stir in fresh spinach and cook until wilted. Season with salt and pepper to taste.
  6. Serve warm with crusty bread or a sprinkle of Parmesan.

Notes

  • For added creaminess, stir in a splash of cream at the end.
  • To freeze, omit the tortellini and add it fresh when reheating.
