- Heat olive oil and butter in a large pot over medium heat. Add chopped onions, carrots, and celery. Sauté until vegetables begin to soften.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a gentle boil. Add shredded chicken and Italian seasoning.
- Add tortellini and cook for 7 to 9 minutes, or until tender.
- Stir in fresh spinach and cook until wilted. Season with salt and pepper to taste.
- Serve warm with crusty bread or a sprinkle of Parmesan.
Notes
- For added creaminess, stir in a splash of cream at the end.
- To freeze, omit the tortellini and add it fresh when reheating.
