Ingredients
  

Salad
  • 2 cups cooked chicken breast diced or shredded
  • 1 apple cored and diced
  • 1 cup seedless grapes halved
  • 1 stalk celery thinly sliced
  • 1/4 cup chopped almonds or pecans optional
Dressing
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tbsp lemon juice fresh
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Dice or shred the cooked chicken breast into small bite sized pieces and place it in a large mixing bowl.
  2. Cut the apple into small cubes and slice the grapes in half so the sweetness spreads evenly through the salad.
  3. Thinly slice the celery to add a fresh crunch without overpowering the other ingredients.
  4. In a separate bowl mix the yogurt or mayonnaise with lemon juice, salt, and pepper until the dressing is smooth.
  5. Add the chicken, apples, grapes, celery, and optional nuts to the bowl with the dressing. Stir gently until everything is well coated.
  6. Refrigerate the salad for about 20 minutes to allow the flavors to blend together.
  7. Taste and adjust seasoning with additional salt, pepper, or lemon juice before serving. Serve chilled.

Notes

This salad is perfect for using leftover or rotisserie chicken. Serve it on lettuce leaves, in sandwiches, or with croissants for an easy lunch. You can also add strawberries, pineapple, or mandarin oranges for extra fruit flavor.
